Ingredients:

1 1/2 pounds of sweet potatoes 

1 1/2 cups of rolled oats 

1 cup of chickpeas 

1/2 cup of cashews 

2 cloves of garlic 

1/2 red onion 

2 tablespoons of vegetarian Worcestershire sauce 

2 tablespoons of coconut oil 

2 tablespoons of olive oil 

1/8 teaspoon of sea salt 

1/8 teaspoon of ground black pepper

Directions:

-Get your oven preheated to 400ºF — that’s equivalent to 200ºC. 

-Peel and cube sweet potatoes, rinse and drain chickpeas, finely chop cashews, peel and mince garlic, and peel and finely chop red onion. 

-Reach for a large mixing bowl. Combine sweet potatoes, garlic, sea salt, ground black pepper and olive oil. Transfer to a large baking sheet and roast for about 45 minutes. Afterwards, allow baking sheet to cool on a wire rack for a while. 

-Transfer the potatoes to the bowl of your food processor. Add in chickpeas, red onion and vegetarian Worcestershire sauce. Process until combined very well. 

-Transfer the contents of the food processor’s bowl to a large mixing bowl. Add in rolled oats and chopped cashews. Mix using a large wooden spoon. 

-Using your hands, roll ingredients into 5 to 6 equal-sized balls and then flatten to turn them into patties. 

-In a large frying pan, heat coconut oil and fry sweet potato burger patties for about 8 minutes or until golden brown. Don’t forget to flip them halfway. 

-Transfer cooked sweet potato burger patties on a serving plate that’s lined with kitchen paper. Place another kitchen paper on top of them to absorb excess oil. 

-After a couple of minutes, remove kitchen paper and then serve vegetarian burger patties out of sweet potatoes as you like.
