However, the best coffee cake to serve most especially if your guests are vegans, sensitive to gluten or simply trying to get rid of excess pounds is the kind that is vegetarian and gluten-free. And that’s exactly the kind of coffee cake that the recipe below will teach you how to make.
Since coffee cake is a classic, you might think that it can be super challenging to make one from scratch, particularly for someone who doesn’t have tons of experience with cake baking. Well, the coffee cake recipe you will encounter later on is perfect even for the most inexperienced baker on the face of the planet!
But making vegetarian and gluten-free coffee cake is not only perfect when family and friends are about to drop by. It’s also ideal to make during a rather quiet weekend at home. You may also make this treat and take it with you to a small get-together — it’s for certain that your baked masterpiece will get the spotlight!
So without any more ado, let’s take a look at the recipe:
Ingredients for the cake:
1 3/4 cups of oat flourÂ
1/2 cup of almond milk (or any other non-dairy milk)Â
1/2 cup of coconut sugarÂ
1/2 cup of applesauce (unsweetened)Â
2 teaspoons of lemon juiceÂ
2 teaspoons of baking powderÂ
1 teaspoon of baking sodaÂ
1 teaspoon of pure vanilla extractÂ
A pinch of sea salt
Ingredients for the streusel:
1 cup of almond flourÂ
3 tablespoons of maple syrup (preferably grade B)Â
1 teaspoon of cinnamon powder
Ingredients for the glaze:
1/4 cup of coconut butter (melted)Â
2 tablespoons of maple syrup (preferably grade B)Â
4 tablespoons of almond milk (or any non-dairy milk of your liking)
Directions:
-Get the oven preheated to 175°C, which is equivalent to 350°F.
-Reach for a large mixing bowl. Combine all of the ingredients for making the cake. Mix all of them very well with a wooden spoon.
-In another mixing bowl, mix all of the ingredients for making the streusel until crumbly. A fork is the best one for the job.
-Grab a glass dish or loaf pan that measures 8 x 5 inches. Have it lightly greased with coconut oil.
-Pour half of the cake batter into the glass dish or loaf pan. It should be a very thin layer only.
-Cover it with half of the streusel.
-Pour the remaining cake batter into the glass dish or loaf pan. Follow it with the remaining streusel.
-Stash the glass dish or loaf pan in the oven. Bake for 40 to 45 minutes.
-While waiting for the vegetarian and gluten-free coffee cake to cook, prepare the glaze.
-In a small mixing bowl, stir maple syrup into melted coconut butter. While stir stirring, add almond milk or any other non-dairy milk that you like little by little. You should end up with something that’s smooth.
-Take the coffee cake out of the oven. Place on a wire rack and allow it to cool for 30 to 45 minutes.
-Pour the glaze on the vegetarian and gluten-free coffee cake. Slice and serve.
