Mix the ingredients together then microwave for 2 minutes. You can also cook it on the stove if you like. You can top your oatmeal with 1 handful of blueberries, ½ banana, chopped, and 1 to 2 tablespoons of raw nuts.
Chocolate Chip Coconut Pancakes
You will need 1 tablespoon of flaxseeds, ¼ cup of old-fashioned rolled oats, 1 tablespoon of baking powder, unsweetened plant milk, ¼ cup of pure maple syrup, sliced bananas, 1/3 cup of grain-sweetened, vegan mini chocolate chips, 1 teaspoon of pure vanilla extract, ½ cup of unsweetened applesauce, pinch of sea salt, 1 ¼ cups of buckwheat flour, and 2 tablespoons of unsweetened coconut flakes. Put the flaxseeds in a small saucepan with half a cup of water and cook it over medium heat until it becomes a bit sticky and appears stringy for about 3 to 4 minutes. Strain the mixture and put aside. Discard the seeds. Get a large bowl and whisk together oats, baking powder, buckwheat flour, coconut flakes, and salt. In a medium bowl, on the other hand, whisk together applesauce, vanilla, milk, maple syrup, and 2 tablespoons of reserved flax water. Add the liquid mixture to the dry mix then stir to blend the ingredients together until the batter becomes thick. Stir in the chocolate chips. Heat your nonstick griddle on medium-low heat then pour about 1/3 cup batter for about 6 to 8 minutes. Flip it over and cook for another five minutes. Keep repeating until the batter is finished.
