Ingredients:

1 cup of mung beans (uncooked) 

1/3 cup of cilantro 

2 medium-sized potatoes 

2 garlic cloves 

1 medium-sized onion 

2 tablespoons of olive oil 

1/2 teaspoon of cumin powder 

Turmeric 

Salt 

Black pepper (finely ground)

Directions:

-About 2 hours before you start making mung bean burger patties, place uncooked mung beans in a bowl and pour water into it. Make sure that the mung beans are completely soaked. 

-An hour after soaking the mung beans, thoroughly wash potatoes under running water. Carefully peel potatoes and then chop them up into very small cubes. 

-Wash cilantro under running water very well, and then start mincing them. 

-Peel onion and then finely mince it. Peel and finely mince garlic cloves, too. 

-Reach for a pot and place potatoes in it. Pour water into the pot, making sure that the potatoes are completely immersed. Sprinkle some salt and bring to a boil using medium heat for 20 minutes or until potatoes are cooked. Set aside. 

-Drain soaked mung beans and then transfer to a pot. Pour water into the pot, seeing to it that the mung beans are completely covered in it. Using medium heat, simmer for about 15 minutes. 

-Drain both potatoes and mung beans, and then place them in a large mixing bowl. Add minced onion and garlic, and also cilantro, cumin powder, a little turmeric and a dash of black pepper. 

-Mix very well and turn mixture into small balls. Flatten to turn them into burger patties. 

-Fry mung bean burger patties in olive oil. Place cooked patties on a plate lined with several pieces of kitchen paper. After a couple of minutes, remove kitchen towel serve.
